pomegranate gelato
a bit softer and melts faster than ice cream..but overall pretty good.
adapted from 101 Cookbooks
MILK 2 cups
CORNSTARCH 5.5 teaspoons
SUGAR 1/2 cup ( i used splenda)
FRUIT 2 cups (i used pomegranate juice)
LIQUOR 2 Tablespoons (i used belvedere vodka)
Simmer 1 cup of milk in saucepan.
To the other cup of milk, dissolve cornstarch and sugar.
when heated milk has scalded (not boiled), remove from heat and add cornstarched sugared milk.
return to low heat.
constantly stir until mixture is the consistancy of a runny milkshake (kinda like heavy whipping cream)...about 10-12 mins.
remove from heat
taste...add sugar if necessary
strain
cool to room temperature...then put in fridge to cool completely (coupla hours)
meanwhile, puree fruit or make juice or get juice
taste...if tart, add sugar
cool in fridge
play Zuma until everything is cold
mix fruit and milk
add vodka
put in ice cream maker
play more Zuma
20-30 min later, sneak a serving...cuz you did all the work...
transfer what's left into an appropriate container and put in freezer to firm up (about an hour)
bask in the accolades

nola's
salmon, skirt steak, jambalaya, green beans, cabbage salad, caeser salad, mashed potatoes...i skipped fried chicken
this was after the appetizers: chicken and beef skewers, crab cake, crawfish dumpling, seared ahi tuna tacos
and a french quarter martini..ok 2 of them.
